Zucchini Boats

I like the name of this recipe: zucchini boats. If only I could find a way to create a higher shape in one of the extremities, I’d call it zucchini gondola :-) .

It is a pretty simple recipe. A lighter way to the Italian traditional stuffed zucchini that needs deep fry. The hardest part is to empty the boat without damaging it, but it is pretty simple to do.

Zucchini is so much used in Italian cooking, and we are always looking for different ways to prepare it. They are exquisite also if you just grill them – even if it takes a little bit long to have enough quantity for a dinner, as it diminishes a lot when grilled because it loses so much water.

Me and my children were quite addicted to another easy zucchini recipe, that I called zucchini lasagna and my daughter prepared it by herself more than a couple of times during this Summertime.

Light version of Italian stuffed zucchini

Ingredients
  • 2 medium zucchini
  • ¼ onion
  • ½ garlic clove
  • 3 Tbsp of extra virgin olive oil
  • 1 egg
  • 2 Tbsp of bread crumbs
  • 2 Tbsp of grated Parmesan cheese
  • parsley
  • 1 mozzarella (100gr)
  • 8 cherry tomatoes
Instructions
  1. Wash the zucchini and cut the extremities.
  2. Cut them in the longitudinal way, trying to have two equal halves.
  3. With a small knife and a teaspoon, empty each half and mince the interior parts.
  4. Place the halves on an oven tray covered with parchment paper.
  5. Preheat the oven to 180°C/356°F.
  6. Put the extra virgin olive oil into a non-adherent pan and turn on the gas.
  7. Mince the onion and add to the oil.
  8. Chop the garlic and add to the onion and oil.
  9. Let them cook for a few minutes and then add the chopped zucchini.
  10. Lower the gas and cover the pan.
  11. Let it cook for 15 minutes, until the zucchini softens.
  12. Add the egg and mix immediately.
  13. Add the bread crumbs, the mozzarella cut in small cubes and half (2 Tbsp) of grated Parmesan and mix well.
  14. Add salt and pepper to taste.
  15. Turn off the gas.
  16. Fill the zucchini boats with this stuffing.
  17. Add the cherry tomatoes cut in halves.
  18. Sprinkle the remaining grated Parmesan cheese on top.
  19. Bake for about 30 to 40 minutes.
